London’s award-winning hospitality studio, Studio Paskin, is expanding its portfolio with a new opening in the vibrant Sydney suburb of Paddington. With over 25 years of industry experience, they’re bringing one of their celebrated brands, The Palomar — proudly awarded a Michelin Bib Gourmand since 2014 — to our community. The Palomar’s menu draws from the rich and diverse culinary traditions of Southern Europe, North Africa, and the Levant – brought to life in an open kitchen centered around a wood fire grill, working with seasonal, locally sourced ingredients from small artisans and growers.
Complementing the restaurant is The Mulwray – Studio Paskin’s intimate wine and cocktail bar and another distinctive brand within the group. Merging indoor and outdoor spaces, the two brands will offer a vibrant, energetic experience where warm hospitality and guest experience are paramount.

- You will oversee restaurant operations, ensuring smooth service and maintaining the highest culinary standards;
- Maintain a consistent level of quality in food preparation, presentation, and taste, ensuring all dishes meet the restaurant's high standards;
- Supervise, train, and mentor kitchen staff, fostering a positive and productive work environment;
- Ensure the kitchen adheres to all health and safety regulations, including hygiene standards and food safety practices;
- Monitor stock levels, place orders for supplies, and manage food costs, ensuring the kitchen operates within budget;
- Work closely with the Restaurant Manager and other departments to ensure seamless service and the overall guest experience;
- Provide ongoing training and opportunities for your team to enhance their skills and grow within the culinary field;
- Stay updated on the latest culinary trends, experimenting with new techniques, flavours, and concepts to keep the menu fresh and exciting;
- Occasionally interact with guests, ensuring satisfaction with the meals and gathering feedback to improve offerings;
- Organise and oversee kitchen operations to maintain high levels of productivity while minimising waste and ensuring consistency in food preparation.

- You have proven experience leading and motivating a diverse kitchen team in a high-pressure environment;
- You are passionate about food and have a creative approach to designing menus and presenting dishes;
- You have a strong focus on quality, cleanliness, and presentation;
- You have wood fire cooking experience and can manage kitchen budgets, controlling food costs, and reducing waste;
- You possess thorough knowledge of food safety regulations and kitchen hygiene practices;
- You have strong communication skills and can collaborate effectively with front-of-house staff and other departments;
- You are able to remain calm and effective in a fast-paced environment.
