Tuga Pastries started as a hole in the wall bakery producing pasteis de nata from a traditional family recipe recreated by Diogo Ferreira. Diogo’s father, Agostinho Ferreira, a pastry chef in Portugal, migrated to Australia in 1985, bringing with him his Portuguese tradition and culture including his beloved secret pastel de nata recipe.

In 1994, they opened their first Portuguese cake shop in Curlewis st Bondi Beach and within six years were making and selling 3000 nata’s every day, each one still hand pressed and hand made to Gus’s secret recipe. In 2016, Gus’s son Diogo continued his fathers legacy; the nata’s you hold today from Tuga Pastries are still hand pressed and hand made, still true to Gus’s village recipe and still taste just as delicious as his did years ago.

What’s Involved

As an Apprentice Pastry Chef, you will learn alongside qualified Chefs in all aspects of food preparation and presentation. Working with us allows you to learn and build experiences from skilled professionals within a commercial kitchen environment. You will be working at one of our great host venues, working with large quantities of food and a variety of seasonal ingredients. Key activities you can expect will be:

  • Assist in the preparation of doughs, batters, creams, fillings and glazes.
  • Baking and Finishing - Assisting in baking cakes, pastries, breads and other baked goods.
  • Operate kitchen equipment.
  • Learn different knife and cooking techniques.
  • Clean, maintain and store kitchen equipment appropriately.

To suit this role, you will be an eager and motivated individual with a passion for food looking to kick-start your culinary career! You will have good communication skills, seek out opportunities to learn and show initiative in your everyday duties.

Must be able to work evenings, weekends & public holidays if required.

In order to be eligible for an apprenticeship in NSW you must be either an:

  • Australian Citizenship
  • Australian Permanent Residency
  • New Zealand Passport Holder residing in Australia for more than six months.
