Guy Grossi’s GARUM is an inspiration of ancient Roman cooking, traditions and culture with contemporary consideration bringing a unique concept to the Hibernian Place precinct.

About The Venue

Garum is situated in the magnificent historical Hibernian Hall at the foot of The Westin Hotel located at the East end of the Perth CBD.

Reflecting on the rich history of the space the venue focuses on the Roman connection. Roman techniques and traditions take the focus of the menu. Uncomplicated and pure are the cornerstones of the kitchen philosophy, delivering local ingredients with a unique Roman flavour.

The focus is on continuously reaching greater levels of guest experiences and for our team members to work in excellent conditions in an environment that promotes the development of skills, knowledge, and career advancement.

About You

We are currently seeking a Chef de Partie with a focus on continuously reaching greater levels of guest experiences in a quality driven kitchen with strong technical skills and understanding of Italian food.

As the successful applicant, you will work well within a team and possess a flexible approach to meet the changing needs of a growing and exciting profession. You will demonstrate excellent customer service skills and will be friendly, polite, and courteous always.

You hold yourself to a higher culinary standard and it is your attention to each preparation that keeps guests with us to dine. Working with a dedicated team of experts, you will learn something different every day as you work with new seasonal menus and unique presentations. You hard work pays off when a dish that you’ve thoughtfully helped to prepare has guests raving and anxious to return.

What You’ll Be Doing

  • Prepare fresh ingredients for cooking according to recipes/menu
  • Cook food and prepare top-quality grilled or woodfired menu items in a timely manner
  • Test foods to ensure proper preparation and temperature
  • Operate kitchen equipment safely and responsibly, follow food safety procedures
  • Ensure the proper sanitation and cleanliness of surfaces and storage containers
  • Able to work calmly and accurately under pressure
  • Be interested and skilled in food provenance, quality produce and seasonality
  • Have a keen eye for detail and care for quality produce (steak)
  • You will be working a dinner shift across Mon - Sat roster.

What We’re Looking For

  • Great teamwork skills and attention to detail
  • Positive outlook and outgoing personality
  • Previous entry leadership experience is a big plus
  • Culinary education is a must
  • Previous experience on a grill section and experience with different kind of cuts (T-bone, filet etc)
  • Quick learner who wants to grow
  • You will have Australian Full Time Working Rights
