At Black Star Pastry, our Bakery is a little different. You won't be producing loaves of bread here. Instead, we're all about viennoiserie, doughs and the craft of lamination - creating the beautiful, buttery, layered products that our stores are known for.
We're looking for an experienced
Chef de Partie – Bakery to join our Production Kitchen and play an important role in both the day-to-day delivery of our Bakery operation and where we take it next.
This is a hands-on role for someone who loves the technical side of pastry, understands what makes great viennoiserie and wants to keep developing their craft — while also having the confidence and capability to lead, motivate and develop a team of experienced and developing bakers.
What You'll Be Doing...
You'll be working alongside the CDP and leadership team to ensure our products are consistently produced to the highest standards, while helping our people become better at what they do.
You'll
- Lead the day-to-day production of our viennoiserie and laminated dough products, ensuring consistency, quality and attention to detail.
- Bring strong technical knowledge of lamination, fermentation, dough development and viennoiserie production to the team.
- Support the development and refinement of Bakery products, processes and production methods.
- Guide and develop a diverse team of experienced and less experienced Bakers, sharing your knowledge and helping others build their technical skills and confidence.
- Set the standard on the floor — demonstrating great technique, strong work practices and a genuine commitment to quality.
- Monitor product quality and identify opportunities to improve consistency, efficiency and presentation.
- Work closely with the wider Production Kitchen and Operations teams to ensure Bakery production supports the needs of our stores.
- Help manage production priorities and make informed decisions when things don't go to plan.
- Contribute to a positive, collaborative kitchen environment where people are encouraged to learn, contribute and take pride in their work.
- Support food safety, WHS, hygiene and operational standards across the Bakery.
What We're Looking For...
We're looking for someone who has strong technical capability but also knows how to bring people along with them.
You'll Ideally Have
- Previous experience in a Senior Baker / Chef de Partie-level role, particularly within viennoiserie and dough lamination.
- A strong understanding of the technical processes behind quality viennoiserie, including dough handling, lamination, fermentation and baking.
- A genuine interest in developing products and improving the way things are done.
- A full understanding of how Bakery production contributes to the success of our stores - including the importance of quality control, consistency, timing and operational efficiency.
- Good working knowledge of the restaurant and hospitality industry.
- The confidence to lead by example and support the development of both experienced and developing Bakers.
- The ability to build effective and constructive relationships — you're a true team player.
- Clear, professional and concise communication skills.
- Exceptional organisation and the ability to stay on top of competing production priorities.
- Good judgement and the confidence to make informed decisions.
- The ability to adapt and remain flexible as business needs and production demands change.
This is a Full-Time opportunity suited to a Baker with at least 3 years’ experience.
Our shifts are typically 5am - 1pm, and our Production Kitchen operates 7-days/week.
