What You Will Be Doing

Lead, mentor and train the Food & Beverage Operations team

Ensure Food & Beverage relevant brand standards are maintained

Strategize on new products and service offerings

Create unforgettable experiences for our guests

As the Food & Beverage Manager at Mercure Perth, you will lead, inspire, and manage our entire F&B division. This includes our signature dining outlets, bustling bar, busy conference and events spaces, and in-room dining.

Your goal is to blend commercial acumen with creative flair—driving revenue, controlling costs, and mentoring a high-performing team, all while delivering the warm, locally inspired hospitality that the Mercure brand is known for.

Qualifications

Minimum of 2–3 years of experience as an F&B Manager or Assistant F&B Manager, ideally within a mid-scale or premium hotel environment.

A hands-on leader who leads from the front, thrives during peak service times, and remains calm under pressure.

Service focused personality is essential and previous leadership experience required

Proven ability to build and maintain good relationships with all stakeholders

Communicate thoughts, actions and opportunities clearly with strong networking skills
