he ole As our full-time Sushi Chef, you’ll be the engine of the kitchen. You’ll run morning prep, roll continuously through peak hours, and keep our production tight, efficient, and adaptable as we learn what our customers love. You’ll also contribute to menu development, including ongoing specials and new roll ideas that align with our modern, Melbourne-cool band This is primarily a solo kitchen role (with support from a kitchen hand during peak hours), so it suits someone confident, independent, and comfortable taking ownership of the kitchen

  • Help finalise the core menu and contribute ongoing specials and new oll ideas
  • Manage daily production planning, adjusting based on sales patterns and custmer demand
  • Place ingredient orders and maintain stock levels (owner manages supplier reationships)
  • Track wastage, yield, and potion control
  • Maintain a clean, organised, foo-safe kitchen
  • Work independently with minial supervision
  • Uphold Sooshy’s modern, urban brand through presentaion and quality What You Bring
  • 2+ years’ experience as a Sushi Chef or ina Japanese kitchen
  • Strong knife skills andhigh-volume ability
  • Confidence in rice cooking, portion contol, and prep systems
  • Ability to work fast withou compromising quality
  • A calm, systematic approach especiall during the lunch rush
  • Creativity within a simpl, modern menu framework
  • Reliability, independence,and pride in consistency
