The Dolphin is one of Sydney's most iconic hospitality venues, combining a bustling public bar, dining area, private events, and a loyal local following. We're looking for an experienced Operations Manager to join our leadership team as the clear second-in-command to the General Manager.
This role is ideal for someone ready to take the next step in their hospitality career - an operationally strong leader who loves people, understands the numbers, and is passionate about delivering outstanding guest experiences.
The Role
Reporting directly to the General Manager, you'll oversee the day-to-day operation of the venue, ensuring seamless execution across both front and back-of-house. You'll be responsible for driving operational performance, developing teams, maintaining standards, and supporting the commercial success of the business.
You'll be equally comfortable reviewing weekly COGS and labour reports as you are leading a busy service from the floor.
What you'll be responsible for
- Supporting the General Manager in the overall operation of the venue
- Leading and developing front-of-house teams and venue supervisors
- Rostering and labour management
- Stock control, stocktakes and inventory management
- Reconciliations, reporting and operational administration
- Monitoring and managing beverage and food COGS
- Driving service standards and guest satisfaction
- Building a positive and high-performing team culture
- Ensuring compliance, venue standards and operational consistency
What you bring to this role
- Previous experience as an Operations Manager, Assistant Venue Manager or senior hospitality leader
- Strong operational and financial management experience in pubs
- Proven experience managing stock, COGS, reconciliations and labour costs
- Strong leadership skills with the ability to coach, mentor and develop teams
- A genuine passion for hospitality, people and guest experiences
- Professional, well-presented and highly organised
- Mature and emotionally intelligent, with the ability to manage diverse personalities and age groups
- Comfortable working in a fast-paced, high-volume pub environment
- Current RSA and RCG
