Chef Supervisor

ESS Defence delivers the best hospitality and support services to Defence sites across Australia. From dining facilities to accommodation and recreation areas, our teams support Defence personnel by providing consistent, high quality food services that contribute to their wellbeing and daily operations.

We are seeking an experienced and confident Chef Supervisor to join our team supporting the Australian Defence Force through our ESS business. This is a hands-on leadership role suited to a chef who enjoys leading teams, maintaining high standards, and delivering consistent, quality food in a structured Defence environment.

Role Location

Air HQ Glenbrook, NSW

Your responsibilities will include

Leading and supporting a kitchen team to deliver daily food service and functions

Overseeing kitchen operations including stock control, ordering and food production

Maintaining food safety, HACCP and allergen compliance standards

Managing menu execution, forecasting and waste minimisation

Support operational and service requirements

What we’re looking for

Certificate III in Commercial Cookery as a minimum

Experience in a Chef Supervisor or leadership role in a high volume environment

Strong leadership skills with experience training and supporting teams

Sound knowledge of HACCP, food safety and allergen management

Well organised with the ability to manage priorities

Ability to obtain and maintain a National Police Check and Defence Baseline Clearance
