Lead beverage and general hospitality category strategy across three integrated resort properties. Melbourne based, full time contract consultant role, 12 months.

About the engagement

BLACKTABLE Consulting is partnering with Australia's largest integrated resort and casino to deliver a new product ordering system and a parallel data remediation programme across Melbourne, Perth, and Sydney. You own the beverage and general hospitality procurement categories. You design the standards, you consolidate product SKUs, and you prepare the catergory RFPs. The role is a full-time contract consultant role where you come with your own ABN and PL/PI insurances. You will be paid a daily rate to be negotiated during the interview process. Role engagement is July 2026 to July 2027, based in Melbourne.

What you will deliver

• SKU rationalisation plan with reduction targets by beverage and general category

• Preferred item lists agreed with venue and hotel operations

• Supplier consolidation recommendations

• Cleansed beverage and general item masters to the golden standard

• Category transition plans with stakeholder sign-off

What you bring

• Five plus years in procurement or category management

• Beverage category experience, including wine, spirits, beer, and non-alcoholic ranges

• General procurement experience, including cleaning, amenities, and operating supplies

• Item master data cleansing and supplier consolidation track record

• Strong analytical skills with Excel and data tooling

• Stakeholder confidence from venue floor through to the executive level

• Your own ABN to invoice your services
