Data Category Manager (Food)

Lead food category strategy, supplier and SKU rationalisation across three integrated resort properties. Melbourne based, contractor role under your own ABN, 12 months.

About the engagement

BLACKTABLE Consulting is partnering with Australia's largest integrated resort and casino to deliver a new product ordering system, a contract lifecycle management rollout, and a parallel data remediation programme across Melbourne, Perth, and Sydney. You join a small specialist team of contractors reporting to the Managing Director. You own the food category data, product SKU and supplier rationalisation, and category transitions that feed the new group-wide ordering system. The role runs full-time from July 2026 to July 2027, based at the client's Melbourne property. You come to this engagement as an independent contractor with your own ABN and PI/PL insurance, engaged by BLACKTABLE Consulting. A daily rate will be negotiated for the right applicant.

What you will deliver

• SKU rationalisation plan with clear reduction targets by category

• Preferred item lists by department and property

• Supplier consolidation recommendations grounded in usage and spend data

• Cleansed and enriched food item masters ready for the new ordering system import

• RFP packs for each food category

• Category transition plans with stakeholder sign-off

What you bring

• Five plus years in procurement, F&B category management, or supplier consolidation roles

• Hospitality, hotel, casino, contract catering, or QSR food category experience

• Strong command of item master data, UOM standards, taxonomy, and supplier hierarchies

• Confident with Excel, or equivalent for spend and usage analysis

• Track record of running RFPs and managing supplier transitions

• Stakeholder fluency from chef and venue manager through to procurement leadership

• Australian work rights
