Purpose

As the Restaurant & Events Manager, you are responsible for planning, directing, controlling and coordinating all Restaurant and Conference & Events activities to ensure the smooth operation and profitability of all outlets at The Olsen. You will work alongside the Head Chef and report directly to the General Manager.

Primary Responsibilities

  • Overseeing all restaurant and event operations, actively participating during peak hours as a hands-on leader
  • Recruiting, training, and supervising team members to ensure all are engaged and performing at their best
  • Manage budgets, rostering, controlling costs, and optimising revenue through pricing strategies, portion control, and inventory management
  • Stay informed about the latest trends in the Food & Beverage & Events sector. Create and update menus. Initiate new strategies to increase revenue and manage it to expectations of the company.
  • Establish and maintain open channels of communication between all departments in the Property particularly the kitchen to ensure the smooth operation of the department

Skills And Experience

  • Have an understanding of all licensing and operating legislation which affects the department including the Liquor Act & hold a valid VIC RSA
  • Prior experience leading teams in a Food & Beverage or Event environment
  • Proven track record in managing budgets, overseeing inventory, and creating staff schedules
  • Effective communicator with adept skills in stakeholder management, both internally and externally
  • Flexibility to accommodate a varied work schedule, including mornings, evenings, weekends, and public holidays. Must be equipped to work weekends and evenings.
  • Exceptional organisational skills with a knack for prioritisation and a keen sense of urgency
  • Demonstrated ability to maintain composure and effectiveness when faced with high-pressure situations
