At Republic Tavern, a gastro pub with its own microbrewery, you'll be part of a relaxed yet energetic atmosphere, highlighting our unique food and drink experiences. At Trader Restaurant, you'll play a key role in delivering a delicious buffet breakfast and catering for events of all sizes. Additionally, contribute to our Conference & Events services, providing exceptional catering for up to 300 delegates, from grand buffets to plated fine dining, ensuring every guest enjoys a memorable experience.

Purpose

As Chef de Partie, you will play a key role in delivering consistent, high-quality food across multiple outlets. Working closely with the wider kitchen brigade, you will contribute to service delivery, team development, and the ongoing evolution of our food offering.

Primary Responsibilities

  • Manage your section efficiently across varying service styles and outlets
  • Support service across Republic Tavern, Trader Restaurant, and Conference & Events as operationally required
  • Take ownership at the pass when required, ensuring quality, consistency, and timely service
  • Maintain strong control of food cost, waste management, and labour within your section
  • Deliver consistently high-quality, well-presented dishes aligned with brand and venue standards
  • Train, mentor, and support junior team members across the kitchen brigade
  • Maintain a clean, safe, and compliant kitchen environment with a strong focus on food safety

Skills & Experience

  • Previous experience as a Demi Chef or Chef de Partie in a professional kitchen
  • Experience working across multiple service styles or high-volume environments highly regarded
  • Strong understanding of HACCP, food safety, and compliance standards
  • A leadership mindset with a passion for developing junior chefs
  • Certificate in Commercial Cookery (required) and Food Safety certification (preferred)
  • Strong organisational and time management skills across prep, service, and cost control
  • Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
